Cider Infused with White Grape Skins

Bottle-conditioning yields subtle hints of bready yeast and white pepper. Bone dry with a beautiful mix of tropical fruit and tart apple aromas, this is the summer love child of a saison and a coastal white.
High Summer is a collaboration with Texas Hill country winemaker Brock Estes. Fresh Ida Red juice was co-fermented on Texas High Plains Roussanne grape skins. The result was unexpected yet wonderful , yielding a apple and grape fruit forward cider. Bottle conditioning adds further complexity to this unqiue cider.
