We started by steeping a culinary cider base in Texas High Plains grape skins and then added just enough Texas Hill Country lavender without ending up with something too floral. We think that we struck the perfect balance with this cider - backsweetening with Texas honey mellows out the lavender and allows the apples to still shine through. Bottle conditioning renders the cider quite dry but the honey sweetness still lingers and creates a well balanced complexity. This is the perfect blend of Texas goodness and New York apples.
